Kitchen Gardeners

With the cooler weather starting and the winter veggies appearing we tend to eat slightly more legumes at this time. It isnt always easy to think of ways to utilise them. I have over many years being cooking with lentils both green and red, they are very nutritious and very cheap which makes them ideal for cooking on a budget or for large meals. With these recipes you can use canned if you wish, I usually have some precooked in my freezer for times when I need to make a meal in a hurry.


SALAD

2 cups of cooked green lentils
1 small diced onion or a handful of finely chopped green
2 tomatoes diced
2 or 3 cups of chopped parsley
2 finely chopped cucumbers
salt to taste
lemon to taste
olive oil as much or little as you want

Mix everything together and serve, nice eaten as a main with hummus or some other kind of pureed veggie salad and yogurt drink........ayran


PILAV

1 cup of cooked lentils
rice
bit of cumin

Cook your rice in the usual way, when you put the water in at that time add the cooked lentils bring and cumin, bring to the boil for a couple of minutes then turn the rice off. Let it sit on the stove for about 15 mins with the lid on or until done. I usually stir the lentils through as during the cooking process they come to the top. Serve with finely chopped parsley on top or whatever herb you have if desired. Sometimes I stir in a handful of chopped walnuts into it before serving, then serve with a green salad and pickles.


You can eat this hot like a pilav or cold as a salad


2 cups of cooked lentils
half a cup of fine cracked wheat
3 tomatoes chopped
2 sweet chillies
1 onion chopped
1 tblsp tomato paste
1 cup of chopped parsley
some fresh chopped mint or dried
pomegrante syrup or lemon juice
salt and pepper

In a bowl add the cooked lentils, add the parsley and mint. In a frypan start cooking the onion in a little oil when done add the chilles and tomatoes. After those are cooked add the tomato paste and cook for another minute. Add mix to the lentils in the bowl and combine. With the cracked wheat you will pour on a little boiling water and let it sit until it has absorbed. Then add it to the lentil mix in the bowl. Add the salt and pepper and the pomegrante syrup. Mix everything well and serve.

I tried commenting on ur page but can't.Try the pickle with any vegetable,add some vinegar to give it a sour taste if u don't get mangoes.

Kathryn! I made this pilav,but with slight difference. It is served with pickles,chutneys and salads.We call it Khichdi.U can google its recipe from any pakistani cooking site.
