Pickled mango is the most famous and demanded pickle in our area.Almost every house hold has a different receipe.I pickle them as my aunty use to do it .
Ingredients:
Green mangoes(they should be the ones that have formed the internal core ,they usually comes at the mid season.)= 1kg.
Turmeric powder= 1/4 KG
Coriander seeds= 4 TBS
Fenugreek seeds= 3 TBS
Onion seeds =3 TBS
Aniseed = 3 TBS
Red chili powder = 5 TBS
Mustered oil =1/2 kg
Salt = to taste
Cut the mangoes in to four halves, remove the stones.Rub half turmeric and salt on the mangoes and place them in sun in a basket.Remove at night,and then put in the sun again in the morning.In two or three days they will be dried.Now crush the remaining spices to a very coarse powder.It should not be a powder crush them so little that they can just smell well.Rub these spices on the mangoes and put them in a jar.Heat the oil in a pan,heat it so much that it can fry a bread crumb if you put one in. You can even put a piece of bread in it to check the temperature.Remove the bread, let it cool to room temperature,Then pour it in the jar. The oil should be an inch above the mangoes,if it is not covering the pickle put some more after heating and cooling.
Now put the jar in sunlight for two days ,tie a cheese cloth on its mouth.Keep on shaking the jar.In a months time it is ready for use.
You have to keep an eye on this pickle for fungus .If you see some clean it and keep the jar in sun to kill the spores.It can last as long as a year.You can put almost every vegetable including peas,chilies,cauliflower,carrot,turnip eggplant,garlic,ginger,onion and chickpeas.You can steam them except chilies and chickpeas,as chickpeas need boiling and chilies,garlic and onion are just salted ,dried overnight in shade.Onion should be placed with lots of salt in an earthen wear pot for some days,when it seems dry put it in the pickle.The vegetables can be boiled and dried after dusting with turmeric and some salt.The most important thing in this pickle is to keep the oil level.As long as your pickle is totally in the oil it is not going to spoil.
You can add the vegetable whenever their season comes.

That sounds wonderful, I will try it with the chickpeas but really want to make it with the mangoes, none here though.
