Have been to the Bazar and bought several kilos of Olives. The ones they sell are green, havent seen any black at the local bazars. I came home and cut into all the olives and have started the leaching. In about a months time I should have some olives ready for the table.

I took a knife and cut 2 vertical cuts into each one, then using several containers added water. You then change the water every day for about a month until all the bitterness has left. Then you use a brine solution. It is very easy just a bit of time is needed.

There are various sites on the web describing how to cure your own olives and all are very interesting and all describing various methods. This is the method I use as it is very easy and the results are rewarding.

When we lived in Adana my mother in law rented a small home in a garden. The garden wasnt hers and consisted of a mixed orchard. Orange, mandarine and olive trees. We harvested the trees for the owner and in return we were given quite a generous amount. I also rented a home and the owner had a few small olive groves, I used to sit there with his wives the 2 of them and sort out his olives as well. He did something a little different than what I had seen others do. He laid all his olives out in a single layer for a month under cover. He told me that he did this in order to increase the oil content of the olives. As he was selling the cured olives to the local markets this was a necessary stage so he said. I have harvested, sorted, and cured olives. Something I never thought I would do. Life can be very interesting if you let it.

I found some black olives at the bazar today much to my surprise. I bought 3 kilos and decided to cure them with salt. I washed them and then packed them into a large container with salt, making sure they were well covered of course. I had someone from Tarsus tell me last year to do just that and when the salt turns liquid to tip it out and recover the olives with more salt. You continue doing this until they are ready, you have to bite them to check, taste test. After that they just keep them stored in the salt and then wash them when they wanted to eat them or you can plunge them into boiling water to rinse off all the salt and then store in olive oil.

It shouldnt take that long I believe it takes 2 years and they say here that the trees like wind. Alot of groves here are on hillsides.

Yes it can be .I have an olive tree but it is very small, I hope it will fruit in a few years.
