Kitchen Gardeners

Ingredients.
Round egg plants=1/2 kg
Onion=1/2kg
Red chili powder=half teaspoon
Turmeric powder=1/4 tsp
Fenugreek seeds=1/2 tsp
Black onion seeds=1/2 tsp
Cumin=1tsp
Tamarind paste=half cup
Salt to taste
Oil half cup.
Cut the egg plants in four equal sections while their heads remain intact.Place a pinch of salt in every cut.Roast the onion or grill it.Remove the upper black layer of the baked onion.Make a fine paste of this onion.Add salt ,chili ,turmeric and cumin to the onion.Stuff the eggplants with it.
In a frying pan put the seeds in hot oil and let them fry for a while,then place the eggplants in to it.Cook until well done then add the tamarind paste and cook for ten min.Serve with boiled basmati rice.
Note;Crushed peanuts ,poppy seeds and crushed coconut can also be added to the stuffing paste but i avoid them.

Yes ! tamarind have a better flavor than tomatoes .But it all depends on availability of things in your area .

That sounds lovely they have the same dish here as well with rice and various spices mixed with tomato paste. I like tamarind paste and have used it in the past but havent been able to find it here.

Hi Everet! I enjoyed your reverie, I was busy today as it is Eid here.I think you know what we Pakistani cook on this day .Dates boiled in milk and vermicelli,patterns of hina on hands and everything.I had lot of hina bushes in my fathers house.Have you ever tried growing it?

in many years, Abdul Sattar. They had me for supper and I enjoyed the most wonderful
