Homemade Sauerkraut

I searched on the internet for a sauerkraut recipe and found this one: Lena's Home Made Sauerkraut. The recipe is quite long, but I'll add a link to her page so you can go there and print it out. Lena's recipe uses 4 tablespoons of kosher salt for every 5 pounds (2.27 kilos) of cabbage. She says that if you are using freshly picked cabbage, a juice will form as soon as you begin to layer the salt and cabbage inside the crock. What The World Eats

Just scrolling through the wonderful photos of KGI's members' harvests reminded me of a photo essay done by Time Magazine some time back. The photos were taken by Peter Menzel for the 2005 book "Hungry Planet". It's apparent that the more industrialized we are, the less we seem to value fresh wholesome foods. Dream garden travel destination:
My dream garden would be one that I could work in for hours a day (if my 401K ever bounces back enough so that I can retire!!)...one that would provide all the veggies and herbs I and my extended family could use. My dream travel destinations are Yorkshire, the south of France, and Austrailia.
Favorite foods:
Pears, apples, carrots, potatoes, tomatoes....most fruits and vegetables, beef, chicken, salmon, halibut, and most shellfish


This is me in the late 1970s...my "Betty Crocker" picture. I've always enjoyed cooking and baking... the kitchen is my favorite room!

Coincidentaly, we were in Thirsk for lunch on Saturday. Thirsk is the place where the books are based and where he had his vets practice, and is about 25 miles north of York.
His real name is Alf Wight which is a lot more down to earth than James Herriot, which was his pen name.
I,ve never read any of the books but we used to watch the TV series years ago. It was very popular.
I bought a red cabbage from the market which they hold in the square in the middle of the town. I,m going to pickle it in vinegar.
My attempts at Sauerktaut were sabotaged by someone allowing the tea towel cover to touch the liquid, and all soak away. I will have to have another go soon.

Hi Gail,
The "Update Status" message only apears on everyone's own page and is not seen by anyone else. It permits you to put a status message. For example, at the top of my page it says Site Administrator, when you look at my page you will see the status message "Site Administrator" but when I look I see that same message followed by another "Update Status" box.

I don't eat turnip greens but some people use them in a mixture of other leaves i;e.mustard, fenugeri ,spinach and turnip greens.These leaves are collected when very young, the variety is also different.
