Why Bother with a Kitchen Garden?

I recently worked for Ann Cooper in the Berkeley Public Schools in the Nutrition Services Department.
Why bother? Easy Cheesy Souffle!
6 T unsalted butter, plus more to butter a 6-cup gratin dish
6 T all-purpose flour
2 cups cold whole milk
1/2 t salt
1/2 t freshly ground black pepper
5 extra large eggs
2 1/2 cups grated swiss cheese, preferably Gruyere (about 6 oz)
3 T fresh minced chives

Preheat the oven to 400F

Butter a 6 cup gratin dish, set aside. Melt the butter in a saucepan (thick bottomed is nice), then add the flour, and mix it well with a whisk. Cook for 10 seconds, add the milk in one stroke, and mix it with a whisk. Keep stirring with the whisk until the mixture thickens and comes to a strong boil, which will take about 2 minutes. It should be thick and smooth. Remove from the heat, and stir in salt and pepper. Allow about 10 minutes for the white sauce to cool.

Meanwhile, break the eggs in to a bowl, and beat well with a fork. Add the eggs, the cheese, and the chives to the cooled sauce, and mix well to combine. Pour into the buttered gratin dish and cook immediately, or set aside until ready to cook.

Bake for 30-40 minutes, or until the souffle is puffy and well browned on top. Although it will stay inflated for quite a while, it is best served immediately.

Garden Design
The Slow Food Nation Victory Garden is a living quilt of plants and people, a garden of communities. Featuring a wide variety of heritage organic vegetables suited to the Bay Area microclimate, the garden will demonstrate the diversity of urban food production practices. Food grown in the garden will be donated to those with limited access to healthy organic produce through a partnership with local food banks and meals programs.

Project Goals
• Create the most beautiful, well-maintained, edible garden in San Francisco
• Demonstrate the potential of a truly local agriculture practice
• Bring together and promote Bay Area urban gardening organizations
• Produce high quality food for those in need
• Celebrate the Slow Food Nation event from August 29 – September 1, 2008
• Celebrate the creation of the San Francisco Food Policy Framework

July 1- 11: Garden Installation
July 12: Community Planting Day
July 12 – Aug 29: Garden Operation, stay tuned for workshop schedule!

The Slow Food Nation Victory Garden is being sponsored by Slow Food Nation and designed by the Garden for the Environment’s Victory Garden 08+ Program and CMG Landscape Architecture. Seeds and starts have been donated by Seeds of Change and numerous individuals from around the country. City Slicker Farms and Ploughshares Nursery are managing seed propagation and providing garden advice, and the Coevolution Institute is providing pollinator attractor plants. Thus far we’ve reached out to the Hayes Valley Neighborhood Parks Program, the Larkin Street Youth Program and others to get a wide variety of community members involved in the garden.

Pickle Time! We made lots of pickles today because our cucumbers are ready and really going strong. We used a recipe from Putting Food By on page 301 the "quick dill pickles". Pretty much just sugar, salt, vinegar, water, dill heads, and garlic cloves. I'll let you know how they turn out.
Also with the cucumbers I made tabbouleh salad (of coarse loaded up with parsley from the garden), falafel, and cucumber diced up in yogurt with smashed garlic and salt in pita bread! YUM! We'll be eating a lot of that cucumber in yogurt, it's delicious.

Here's the recipe I used for the carrots: (From: http://mexicanfood.about.com/od/sidedishes/r/spicycarrots.htm)
These spicy pickled carrots are not exactly a side dish, they are very strongly flavored so they are usually eaten in small amounts along with the main dish. Spicy pickled carrots add a wonderful zing of flavor to any meal.
Ingredients:
2 lbs large carrots, peeled and sliced into 1/4 inch thick pieces
5 cloves garlic peeled and diced
1 1/2 cups vinegar
1 1/2 cups water
10 bay leaves, whole
8 peppercorns
1 teaspoon salt
6 oz. pickled jalapenos
Preparation:
Heat oil in a large saucepan and saute the garlic. Add in carrots and saute for 2-3 minutes. Carefully add in vinegar, peppercorns, salt, and and bay leaves. Bring to a simmer for 5 minutes and then add water and jalapenos and bring to a simmer again for another 10 mintues.
Let it cool completely and then transfer the carrots and cooking liquid into a covered container and refrigerate overnight. Store the carrots in the liquid and use a slotted spoon to serve them. You may leave the bay leaves in the liquid to add to the flavor, but do not eat them. Always remove the bay leaves before you eat the carrots.

I changed it a little based on ingredients I had and because it's just a refrigerator pickle there's less "pressure" to follow a precise recipe :-) Enjoy!
