We sampled the cucumbers I pickled just before Christmas and while the flavour was good the skins were tough. They are gherkins or pickling cucumbers. Should I have peeled them? I would be grateful for any advice.

We will focus this group on different methods of preservation. Canning, drying and freezing are common, but do you preserve your harvest by some other methods? I hope that we can share methods and techniques in this group. Please share pictures!

My kitchen wouldn't be complete without fresh fruit. The focus of this group will be berrries! What do you grow? Do you have favorite varieties? How do you grow them? Please share your thoughts, comments and pictures!

During this time of year most people here are busy pickling. Carrots, cauliflower, cabbage, chillis, large radishes and other veggies are in and waiting to be pickled. Last month I made a couple of kilos of carrot sticks and a few small heads of cau…

I tried bread and butter pickled zuks.... YUCK. I'm not growing zucchinis this year, I've already experienced them in all their forms and I just DO NOT like them.

Thanks for the relish recipe. I will make some this weekend.

Hello, Thought this might be of interest--a "jam a long" challenge. I just made my first entry and it did show me how rusty I am in canning (after several months of no canning, on top of me just learning to do it) and what I need to get ready for a…

Hi everyone, Kyle, thanks for the pickled zucchini ideal! I always plant too many plants, what the buds do not get, I give to coworkers, who do not garden. But I am going to start pickling this year, so I will try the squash too.

Thanks Kyle. I will try that. I have pickled cucumbers this summer and will try the same recipe for the zucchini. Every summer I make the same mistake - I vow to only plant one plant and usually end up with four plants and a glut. Everyone else does…

Mary this past summer we canned dill cucumber pickles and we had a few Zucchini left so we made them into long spear pikles too. Taste the same, and even naturally crisper. I bet you could do Bread and Butter pickles with Zucchini too! They really t…

Does anyone have a recipe for zucchini relish or pickled zucchini. In southern Australia we're sweltering in 40 deg c ( 109deg F) heat and the only things flourishing are the zucchini.

It was a great article in the NYT, right? It finally inspired me to get the canning equipment I need--and I'm doing a pick your own in a few weeks! Strawberries!

Angie, I see you started your canning group, but you indicate you're focus is on preserving "methods" when I specifically said that's what my group was doing. How should I proceed now?

Hi Angie. What beautiful photos you posted. Is that your farmhouse in the distance? It's beautiful.

As to the groups and repetition... repetition seems to be inevitable here, in discussions and sometimes in groups. It frustrates me, but I'm a bit anal that way. There is no one/no way to monitor it the way the site is set up. I believe we are supposed to police ourselves, but some folks can be a bit touchy about things, and most just seem to ignore some issues.

KGI is growing so quickly and so exponentially, that repetition is bound to happen. There is just too much to sift and sort through any more to find out if our topic of interest is "out there."

The Root Cellar group is supposed to focus on methods of preservation, rather than recipes, even though someone has started adding recipes. And the types of preservation I'd like us to discuss are those other than canning.

I don't think adding a Canning and Preserving Recipes group would be overlap if you specify that your group is recipes. That is what you're going for isn't it? If so, go for it. I will mention, however, that we have a recipe collection under notes and a recipe group. Make sure people understand that yours is for canning and preserving recipes only if that is the case.

Good luck. mwf

I would guess they are related to blackberries. A bit smaller, not quite as many seed and the color is more of a purplish color. I've read that if too close to blackberries they will cross. They grow everywhere down here, road sides, unkept yards, and acreage that hasn't been cleared completely. When I was growing up it was common to see folks on the side of the road picking them. They are great to eat and make a good jam.

The birds love them. I let one large stump just be covered with them and the birds sit up in the middle of all of these vines and eat, sing and recycle.

Hi Angie Knost, Welcome to KGI, I'm sure you'll find the community interesting. The navigation bar at the top will help you find your way around. "My Page" will take you back to your own page on the site. "Events" will take you to an area giving information on upcoming events. "Forum" is where you will find all the discussions that are going on at the moment and "Notes" is where I can write bits and pieces that might be of interest to members. At the moment there is a list of recipes, (Recipes, recipes, recipes) and some other things of interest..

If you would like to suggest anything or there is anythimg I can do to help, then please just leave a comment on my page
