Hootie Hoo Glenn. I've had my troubles over the years with carrots residing here in southern California. My first year, I was not as careful to remove enough stone from the bed. I had carrots twisted and curvy. Another mistake I made in the beginning was planting carrots too close to one another. I planted a lovely variety this week including Nantes carrots.
I completely agree with eating when first picked. I also reseed as I pick. I have various beds around my property and I too plant in table beds. I have lovely buttercrunch lettuce, carrots, radish etc. Planting in table beds is convenient but also helps against particular pests.
Whenever I have far too many carrots at one time, I like to make banana carrot bread, potato carrot soup etc.

Here's my recipe for potato carrot soup:
POTATO-CARROT SOUP
1/4 c. butter
2 chicken bouillon cubes
3 c. diced raw potatoes
1 tsp. celery salt (or to taste)
1 1/3 c. evaporated milk
1 tbsp. flour
1 med. onion, chopped
3 c. boiling water
3 carrots, diced
1/4 tsp. pepper
1 bay leaf
salt, if needed, to taste
2/3 c. water
Melt butter in large saucepan; add onion and saute until browned.
Dissolve bouillon cubes in (3 cups) of boiling water. Add to the onions along with the potatoes and carrots.
Add bay leaf, salt, celery and pepper to taste (more salt may not be needed, depending on how salty your brand of bouillon cubes are).
Simmer over low heat until potatoes are tender. Stir in evaporated milk.
Blend 2/3 cup water with flour; stir into soup. Heat and stir until slightly thickened.
Serves 5 or 6.

Hi Emma
These just pulled carrots look really nice. I think that carrots, peas and sweetcorn are all similar in that they need to be eaten when when first picked. All their sugars start turning to starch straight away so they don,t taste as good if you leaved them.
I struggle to grow clean carrots as we get carrot fly which bore small dirty black channels through the carrots.
Next year i am going to try growing carrots on a table bed to get above the carrot fly.
