Preserving the Harvest

We will focus this group on different methods of preservation. Canning, drying and freezing are common, but do you preserve your harvest by some other methods? I hope that we can share methods and techniques in this group. Please share pictures!

We sampled the cucumbers I pickled just before Christmas and while the flavour was good the skins were tough. They are gherkins or pickling cucumbers. Should I have peeled them? I would be grateful for any advice.

During this time of year most people here are busy pickling. Carrots, cauliflower, cabbage, chillis, large radishes and other veggies are in and waiting to be pickled. Last month I made a couple of kilos of carrot sticks and a few small heads of cauliflower. Both of which turned out lovely and we have started eating them. This month I have done several kilos of carrot sticks, mixed veggies, red cabbage and will soon start making salgam. I will also make sauercraut with the red and white cabbages. We have done about 30 kilos so far and I plan to make at least that much or more again before the season is out. Up in the mountains there are some pomegrantes still fruiting so when we get up there I will pick the last of the fruit and make jam from them as well.

I tried bread and butter pickled zuks.... YUCK. I'm not growing zucchinis this year, I've already experienced them in all their forms and I just DO NOT like them.

Thought this might be of interest--a "jam a long" challenge. I just made my first entry and it did show me how rusty I am in canning (after several months of no canning, on top of me just learning to do it) and what I need to get ready for a good year ahead!

Hi everyone,
Kyle, thanks for the pickled zucchini ideal! I always plant too many plants, what the buds do not get, I give to coworkers, who do not garden. But I am going to start pickling this year, so I will try the squash too.

Thanks Kyle. I will try that. I have pickled cucumbers this summer and will try the same recipe for the zucchini. Every summer I make the same mistake - I vow to only plant one plant and usually end up with four plants and a glut. Everyone else does the same so you can't even give them away.

We have also had a bumper apricot harvest brought on early by the heatwave we are experiencing and I have made jam and sorbet and ice cream . Now the race is on to beat the birds to the mulberries.

Mary this past summer we canned dill cucumber pickles and we had a few Zucchini left so we made them into long spear pikles too. Taste the same, and even naturally crisper.
I bet you could do Bread and Butter pickles with Zucchini too! They really take on the flavor of what ever you cook or season them with.

Does anyone have a recipe for zucchini relish or pickled zucchini. In southern Australia we're sweltering in 40 deg c ( 109deg F) heat and the only things flourishing are the zucchini.
