Oh how I wish I lived in a part of the world where a person can growe olive trees! Sigh...

Hi Jackie! my olive plant is very young but my neighbor has a tree .She picks them as green and black .I don't know whether their color depends on how ripe are they or the plant is grafted with two varieties.She pickles them after boiling and drying, in Pakistani achar spices. And they taste lovely.

Hi Jacki, hope you are doing well havent seen you for a long time. What they do here is they put the olives in a large container and cover them with water (you can cut a split in them if you wish) and everyday you empty and refill the water. You do this for a month and after that you can pickle in a normal brine solution, adding any garlic or spices you wish. This is very easy just a little time consuming but well worth the effort considering this is your own tree. Rinsing them for a month takes out the bitterness. You can also empty and refill the water 2 times per day if you wish.
